Domaine Les Crayères

If there was ever a name in Champagne that inspires dreams, it would be “Domaine des Crayères”… The name smells sweetly of haute French gastronomy (a UNESCO Intangible Cultural Heritage) served there, as does the warm welcome into a place imbued with history and poetry, where romanticism is the rule.

It has an extremely prominent geographical location, in the heart of the city of the coronation of France’s kings, and just a stone’s throw from several Champagne houses.

Delicate and subtle spirit

Since 1904, comfort and elegance have been the main priorities of Domaine de Crayères, which was formerly the home of the Polignac family, and now the property of the Gardiniers.  It was entirely refitted by the interior architect, Pierre-Yves Rochon, who revisited and modernized the château style in a more refined, delicate and subtle spirit.

It is the perfect place to make a declaration of love! Nothing here is lacking, with elegance and refinement the main focal point!

Multiple facets

Philippe Mille, awarded two Michelin stars and Meilleur Ouvrier de France (Best Craftsman in France), is the chef at the gourmet restaurant, Le Parc. The chef brandishes a brilliant list of awards, also winning the Bocuse d’Or Europe and the Bocuse de Bronze in 2009, and elected master chef Relais & Châteaux in 2011, all of which he artistically applies to his flavorful creations. The seasons guide his cuisine, which is conceived to highlight the terroir and local products of the region of Champagne. Philippe Mille, inspired by “the most mythical of wines”, has signed his first publication: Le goût à l’état brut (Flavor at its purest), where he invites us to meet all of his producers, pages to devour!

The chef’s second playing field is the brasserie, Le Jardin. Here, he gives free rein to the simplicity of traditional dishes and the tasting of selected wines by the glass, in a contemporary setting of steel, stone and brick.

Finally, it is at La Rotonde bar, overlooking the centuries-old, life-giving park, under a sky as rich in stars as Champagne is rich in bubbles, that the clinking of glasses takes us to a whole new world filled with the sound of enchanting jazz melodies. The choice is vast on the customized drink menu, which offers over 600 Champagnes and over 1,000 wines for tasting!

An unmissable event

It has already been nine years since the first time Crayères hosted an event which has now become a popular meeting place: La Soirée Blanche during France’s annual music festival.  This year it will be held on June 22nd, 2019, and promises to be musical evening showcasing four exclusive concerts in several sites of the domain, ending with a sparkling finale, illuminated by a gigantic fire work display!

Dinner baskets for two prepared by the chef and special “Soirée Blanche” menus served at the gourmet restaurant and at the brasserie will be offered.
